Lemon-Iced Sugar Cookies
These are Bo's all time FAVORITE cookies. They are amazing. Go ahead, give 'em a try!
2 cups flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 cup butter, softened
1 1/2 cups sugar
1 egg
1 tsp vanilla
1/4 cup sour cream
Whisk together dry ingredients and set aside. Cream butter and sugar until light and fluffy. Add egg and vanilla, beating well to combine. With mixer on low, add half flour mixture, followed by sour cream, then remaining flour mixture. Mix just until combined. Scoop onto greased cookie sheet and bake at 350 degrees until cookies are set but not browned, about 12 minutes. Cool and frost.
Icing:
3 tablespoons butter, melted
2 tablespoons milk
2 tablespoons lemon juice
1/2 teaspoon lemon zest
1/2 teaspoon vanilla
3 cups powdered sugar
3-4 drops yellow food coloring
Whisk together ingredients until smooth. Spread each cookie with a thin layer of icing. Cookies are prettiest if icing is kept slightly warm while you frost (heat for a few seconds in the microwave). Let icing set before serving or packaging.

Porcupine Meatballs
This is just mom's recipe, so a little bit of home!
1 Can of Tomato Soup
1/2 tsp Chili Powder
1/2 C Water
Blend all ingredients in a skillet and begin heating. Bring this to a boil.
Meanwhile...
1 lb Beef
1/3 C Uncooked Rice
1/4 C Chopped Onion
1/4 C Water
1 tsp Salt
Dash of Pepper
Combine all ingredients in bowl. Shape into balls.
When first mixture starts boiling, put the rolled meatballs into the skillet. Turn heat down and cover. Simmer gently for 1 hour or till completely cooked. Stir occasionally.

Almond Bar
4 Eggs
2 C Sugar
1 C Melted Butter
2 C Flour
2 1/2 tsp. Almond Extract
Powdered Sugar
Beat eggs and sugar. Add butter, flour and extract. Spread into greased pan. Bake at 325 for 30-35 minutes. Cool, sprinkle powdered sugar on top.
