Cream Cheese Chicken


Cream Cheese Chicken
Bo found this with his Android app and it is AMAZING to say the least.  If you like Chicken Cordon Bleu, you will LOVE this. :)

Ingredients
4 boneless, skinless chicken breast
4 oz - softened cream cheese
1 tablespoon - chopped parsley
1 tablespoon - onion , minced
2 teaspoon - lemon juice
1/4 cup - flour
1/2 teaspoon - garlic salt
1/4 teaspoon - pepper
1 egg, beaten
1/2 cup - corn flake crumbs

Serves 4.

Directions
1 Preheat oven to 350°
2 place chicken breasts between sheets of wax paper & flatten to around 1/4 inch thick
3 In a bowl, beat cream cheese, parsley, onion, garlic salt and pepper and lemon juice until blended
4 Spoon 2 tablespoons of the cream cheese mixture on each piece of chicken
5 Roll chicken. Coat rolls with flour, dip in egg mixture, then roll in corn flakes
6 Drizzle some olive oil in a large skillet. Cook over medium heat. Make sure to brown on all sides
7 Place chicken rolls in a baking dish. Bake for 30 minutes or until chicken is fork tender and juices run clear.

Old-Time Beef Stew

Bo and I tried this last night and it was Amazing!! :) 


Old-Time Beef Stew

Serves: 6 servings (I'd say more like 3...)

Ingredients
2 pounds stew beef
2 tablespoons vegetable oil
2 cups water
1 tablespoon Worcestershire sauce
1 clove garlic, peeled     (I just used minced garlic and kept it in there and it was great!)
1 or 2 bay leaves
1 medium onion, sliced
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon paprika
Dash ground allspice or ground cloves
3 large carrots, sliced
3 ribs celery, chopped   (Bo hates celery, so we used green peppers, worked just the same)
2 tablespoons cornstarch

Directions

Brown meat in hot oil. Add water, Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1 1/2 hours. Remove bay leaves and garlic clove. Add carrots and celery. Cover and cook 30 to 40 minutes longer. To thicken gravy, remove 2 cups hot liquid. Using a separate bowl, combine

1/4 cup water and cornstarch until smooth. Mix with a little hot liquid and return mixture to pot. Stir and cook until bubbly.
