Street Corn (Elote)

Street Corn (Elote)

12 oz frozen corn, you can use fire roasted canned corn as well

1 Tbsp olive oil

2 tsp minced garlic

2 tsp minced jalapeno

1/4 cup finely chopped green onions

1 large lime (1 1/2 Tbsp lime juice)

3 Tbsp mayo

3 Tbsp sour cream

1/4 tsp chili powder

1/8 tsp cumin

Cotija

In a large skillet heat oil over medium high heat and add corn and toss to coat with oil. Then spread into a single layer. Let the corn cook for a few minutes before stirring. You want to get a nice char/browning on the corn. Once corn is nicely charred, remove from heat and cool. I like to spread it on a plate and cool it in the fridge to speed up the process.

While the corn is cooling, make the dressing: In a separate bowl, zest and juice the lime to get 1/4 tsp zest and 1 1/2 Tbsp juice. Whisk together the zest, juice, mayo, sour cream, cumin, 1/4 tsp paprika, chili powder, 1/4 tsp salt, and 1/4 tsp pepper.

Once the corn is cooled, stir in cilantro, green onions, and jalapeno. Pour the dressing over the corn and mix until well coated.

Sprinkle with cotija before serving. I will mix in the cotija right before serving if i am serving this at a party.
